Honey Butter Ambrosia

  • 1 cup sugar
  • 1 cup heavy cream
  • 1 cup honey
  • 3 sticks butter (or 3/4 lb), softened
  • 1 tsp vanilla

Preparation

Step 1


In a sauce pan combine sugar, cream and honey.

Heat on medium high heat and stir until it comes to a boil. Boil for 1 minute.

Put the softened butter in a blender

, and pour the hot mixture over the butter.

Blend until mixed well. Add vanilla, and blend again.

I like to use the “batters” preset button on my Blendtec to get everything well mixed.

Pour mixture into your container of choice. This recipe fills 2 pint sized mason jars and one 1/2 pint sized jar almost exactly. Cover and let cool in the refrigerator. Keep refrigerated. The butter will keep in the fridge for about 6 weeks and a few months in the freezer.
