CARMELIZED ONION AND GRUYERE TART

  • 3 cups (about 10 ounces) grated Gruyere cheese
  • 8 ounce cream cheese (softened)
  • 1 tablespoon Dijon mustard
  • 1 tablespoon chopped fresh oregano
  • 3/4 teaspoon fresh ground pepper
  • 2 tablespoons unsalted butter
  • 2 large (2 cups) sweet yellow onions sliced 1/4 inch thick
  • 2 tablespoons fresh thyme
  • 1/2 cup kalamata olives sliced
  • 2 Trader Joe’s frozen pie crusts, thawed

Heat oven to 400 degrees. Mix Gruyere, cream cheese, mustard, oregano and pepper in bowl and set aside. Melt butter in large skillet, add onions and cook stirring occasionally over medium-low heat until dark brown and caramelized – about 1 hour. Stir in thyme and set aside.

Set thawed pie crusts on parchment lined baking sheets. Spread the cheese mixture on dough leaving a ½ inch border all the way around. Top with caramelized onions and olives. Crimp around edges.

Bake tarts for 10 minutes at 400. Reduce heat to 375 and bake until puffed and golden – about 15 more minutes.
