Pierogi Casserole

Ingredients

  • 5 good sized potatoes, peeled and cubed
  • 1 stick butter
  • 1 onion, chopped
  • 1/2 of a 16 oz. package lasagna noodles
  • salt and pepper to taste
  • 3 Tbsp. fresh chives
  • 1/2 cup milk
  • 1/2 pound bacon, diced
  • 6 cloves of fresh garlic
  • 2 cups cheddar cheese, shredded
  • 1 (8 oz. container) sour cream
  • 350 oven

Preparation

Step 1

Place the potatoes in a large pan with water and boil till the potatoes are tender. Drain. then combine the milk and 6 Tbsp. of butter ~ mash and set aside.
Melt the remaining 2 Tbsp. of butter in a large skillet over medium high heat. Saute the bacon, onion and garlic in the butter for 5 to 10 minutes or until the bacon is cooked.
Cook the lasagna noodles till done and rinse under cool water.
Place 1/2 of the mashed potatoes in a buttered 9 x 13 pan. then top this with 1/3 of the cheese and then a layer of
lasagna noodles. then arrange the bacon, onion and garlic ~ repeat layers...Bake uncovered @ 350 for approximately 45 minutes of less. Serve with sour cream and chopped chives.
