Ingredients

  • cup flour

  • 1

    tsp baking powder

  • 1

    tsp baking soda

  • ½

    tsp salt

  • ½

    tsp nutmeg

  • ¾

    tsp cinnamon

  • 3

    ripe bananas, mashed

  • ½

    cup sugar

  • 1

    egg, lightly beaten

  • oil

  • 1

    tsp vanilla

  • TOPPING:

  • 2

    Tbsp flour

  • cup brown sugar

  • ¼

    tsp cinnamon

  • 1

    Tbsp butter

Directions

1. Preheat oven to 375 and line muffin pan with liners. 2. In a large bowl, mix together flour,baking powder, baking soda, salt, nutmeg, and cinnamon. 3. In another bowl, beat together bananas, sugar, egg, oil and vanilla. 4. Stir the banana mixture into the flour mixture just until moistened. 5. Spoon batter into prepared muffin cups. 6. In a small bowl, mix together flour, brown sugar and cinnamon. Cut in 1 Tbsp butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins. 7. Bake in preheated over for 18 to 20 minutes, until toothpick inserted in middle comes out clean.
