Ingredients

  • 1 3/4 c. white whole-wheat flour
  • 1 3/4 c. wheat bran
  • 3/4 c. granulated sugar
  • 3/4 c. sunflower seeds
  • 1 t. fine salt
  • 1 t. ground cinnamon
  • 3/4 t. baking powder
  • 3/4 t. baking soda
  • 1 1/2 c. mashed ripe banana (about 4 medium bananas)
  • 3 beaten large eggs
  • 3/4 c. whole milk
  • 4 T. melted butter
  • 2 t. pure vanilla extract
  • 2 c. fresh or frozen blueberries
  • butter/cooking spray for the tin

Preparation

Step 1

Heat oven to 375 degrees. Coat a 12 cup muffin tin with unsalted butter or cooking spray.
Whisk together dry ingredients in a large bowl.
In a separate bowl, combine bananas, eggs, milk, butter and vanilla.
Add the wet ingredients to the dry ingredients and whisk until combined. Fold in blueberries.
Divide the batter among the muffin cups (the batter will come to the top of the muffin cups). Bake, rotating the muffin tin halfway through until a toothpick inserted in the center comes out clean, 25 to 30 minutes. Cool for 5 minutes; transfer to a rack. Serve warm or at room temperature.
