Ingredients

  • Nonstick spray coating
  • 1/4 cup fine dry bread crumbs
  • 1 tablespoon grated Parmesan cheese
  • 1/8 teaspoon paprika
  • 2 cups zucchini slices, onion rings, cauliflower or broccoli (any combination)
  • 2 tablespoons Italian dressing

Step 1

Heat oven to 450 degrees. Spray baking sheet with nonstick coating; set aside. Stir bread crumbs, cheese and paprika in pie plate until well mixed. Place vegetables in mixing bowl. Drizzle with salad dressing and toss until coated. Roll vegetables in crumb mixture and place in single layer on baking sheet. Bake 9 - 11 minutes or until golden brown.
