Shortcut Focaccia Bread

  • 1 pound store bought pizza dough at room temperature
  • Chopped thyme or Chopped rosemary
  • Kosher salt
  • Olive oil

Step 1

Brush a baking sheet with olive oil. Stretch room temperature pizza dough into a 10 by 12 inch rectangle on the baking sheet. Make dimples in the dough with your fingers, then brush lightly with more olive oil and sprinkle with either the fresh rosemary or thyme and Kosher salt. Let rise, uncovered, at room temperature until puffy, 1 to 2 hours. Bake at 425 until golden, about 15 minutes. Cut into pieces, or larger "flatbread style" squares which can be topped.

Variation: Thinly slice 1 clove of garlic. Put 1/4 cup of olive oil in a skillet and slowly warm on low heat. Add garlic slices and allow to come to a slight sizzle. Remove from heat and allow to sit until completely cool. Remove garlic slices from oil and brush on pizza dough before sprinkling with herbs and salt.
