Albondigas Soup

Family favorite -- Easy to make with prepared frozen meatballs from Costco.

Ingredients
- 1/3 to 1/2 Bag of Frozen Meatballs
- 2 32oz Boxes of Beef Broth
- 3 cans Zesty Diced Tomatoes
- 4 to 5 Garlic Cloves (pressed)
- 2 C Carrots(diced)
- 1 1/2 C Celery Stalks (split/diced)
- 1 1/2 Brown Onions (diced)
- 3 Jalapeno Peppers (seeded/diced)
- 3 Serrano Peppers (seeded/diced)
- Wear Rubber Gloves when preparing peppers
- 1 1/2 tsp Ground Cumin
- 1 1/2 tsp Dried Thyme
- 1 tsp Celery Salt
- 1 tsp White Pepper
- 1 1/2 tsp Dried Basil
- 1 1/2 tsp Dried Oregano
- 1 Bunch of Cilantro (chopped)
- 1 pkg. Guerrero Tostadas
- 3 to 4 Fresh Limes (cut in wedges)
- Queso Fresco Mexican Cheese
Preparation
Step 1
In a large soup pot pour beef broth, canned tomatoes and meatballs. Cook on med heat for 15 minutes. Prepare and add all vegetables and add to soup pot. Add all spices and cook at a slow simmer until carrots are soft when pierced with fork.
To serve:
Ladle soup into large soup bowl, crumble 1/2 a tostada shell into soup and top with cilantro, juice of lime wedge and crumbled cheese.
