Ingredients

- Sweet Potato & Black Bean Burritos
- Ingredients:
- 3 sweet potatoes
- 3 tbs lime juice
- 1 1/2 c cooked black beans
- 1/2 red onion, diced
- 1 large tomato, diced
- 8-10 soft corn or wheat tortillas
- 1 1/2 c salsa
- 1/2 c corn, fresh or frozen
- 1/4 c scallions
- cheese (optional)
Preparation
Step 1
Preheat oven to 400.
Bake sweet potatoes 45 minutes or until soft. Remove from heat and allow to cool before peeling and mashing with lime juice. Fold in black beans, chopped onion and tomato. Spoon potato filling into center of each tortilla, roll up and place seam side down in shallow casserole. Spoon salsa over top and broil 3 minutes. Remove for oven, top with cheese and corn and broil 2 more minutes, or until cheese is melted. Top with scallions and serve.
