Ingredients
- 1 lb. extra lean ground beef
- 1 medium onion, chopped
- 2 cups cubed potatoes
- 1 cup chopped celery
- 1 cup diced carrots
- 1 cup dry lentils, rinsed
- 1/2 cup medium size pearl barley
- 8 cups water
- 2 tsp. beef bouillon granules
- 1/2 tsp. salt
- 1/2 tsp. lemon pepper easoning
- 2 (14.5 oz.) cans low-sodium stewed tomatoes, undrained
Preparation
Step 1
1. Brown ground beef with onions in a skillet. Drain
2. Combine all ingredients except tomatoes in slow cooker.
3. Cook on low 6 hours, or until tender.
Variations: For added zest, you may want to increase the lemon pepper seasoning to 1 tsp. You may also want to add 1/2 tsp. dried basil and 1/2 tsp. dried the to step 2.
