Spicy Shrimp Salad

This salad is easy to prepare and great for a pot luck. Plan to prepare a day ahead because you want all the flavors to come together.

Ingredients
- 1 lb Frozen Shrimp (cooked,sm/med size)
- 3 TBLS Olive Oil
- 7 Garlic Cloves (pressed)
- 1/2 tsp Crushed Red Pepper
- 1 C Corn (frozen)
- 1 C Cherry Tomatoes
- 1/4 C Red Onion (diced)
- 1/2 C Cilantro (chopped)
- 1 C Mozzarella Cheese (cut into cubes)
- Juice of 1/2 Fresh Lemon
- Salt to Taste
Preparation
Step 1
Prepare a day ahead.
Thaw shrimp and drain. In a small pan, heat oil, add garlic and pepper. Add corn, tomatoes and onion. Cook until wilted, about 3 minutes on high heat. Just before cooking is done add shrimp. Transfer to bowl and add cilantro, lemon juice, salt and black pepper. Cover and refrigerate overnight. Just before serving add mozzarella cheese cubes and toss.
