Peach Mini Pies

Ingredients

  • 2 ripe peaches, peeled,pitted & cut into 1/2” pieces
  • 1/2 cup sugar
  • 2 T. cornstarch
  • 1 tsp. ground ginger
  • 1 14 oz. pkg. (2 crusts) refrigerated pie crusts – at room temp.
  • 1 beaten egg + 1 T. water

Step 1

1. Heat oever to 400°. Toss peaches, sugar, cornstarch, ginger& lemon juice in medium bowl. Set aside.
Unroll crusts on lightly floured surface. Using 3” round cutter, cut out 8 rounds from each crust. Spoon 1 heaping T. filling onto center of 8 rounds. Moisten edges of each round / egg wash. Top each with 2nd round – press edges with fork to seal. Place pies 2” apart on ungreased baking sheets. Sprinkle tops with more sugar if desired. Bake 18-20 minutes or till golden. Serve warm or at room temp.
