LATKES, POTATO

Grammy Bader's recipe from Jeff. Nicole & Rosie tried the pre-grated potato shortcut in 2014 when Jeff had ankle surgery and couldn't perform his annual Hanukkah magic.

Ingredients
- 4-5 large potatoes (or substitute frozen pre-grated hash brown potatoes)
- 1 medium onion
- 2 eggs
- 1/2 teaspoon baking powder
- 1 1/2 teaspoon salt
- pepper, to taste
- 1/4 cup matzoh meal
- oil for frying
Preparation
Step 1
Peel potatoes and onion and grate twice using food processor. If using frozen pre-grated has brown potatoes, grate once using food processor.
Add eggs, baking powder, salt, pepper, and matzoh meal.
Drop by large spoonfuls into hot oil deep enough to just cover the latkes.
Fry on medium heat until brown.
Drain on paper towel.
