Clay Pot Roasted Chicken

By

I bought a clay pot last week and decide to try it out today. OMGoodness was this chicken GOOD ?. It was juicy and flavorful! Ultimately it was STRESS-FREE! The cooker was awesome plus the clean up was minimal.

Preparation

Step 1

Soak bottom and lid for 10 to 15 minutes in cold water. Dry and set aside.
Season chicken and place in pot. Add any veggies you want. I think I will use celery, onion, garlic and carrots. I'll also add fresh thyme, sage, and rosemary. You can add veggies first then place the chicken on top of them. I'll probably stuff my chicken with the veggies.
Cover the baker and place in a COLD oven. Turn oven on to 450* and cook for 90 mins.
Remove the lid from the baker and continue to cook for 10 to 15 minutes, or until chicken is nicely brown.
Let chicken rest for 15 to 20 minutes.
