Wild Rice Turkey Salad

Ingredients
- 2/3 cup uncooked wild rice (2 cups cooked)
- 2/3 cup plain yogurt
- 1/3 cup milk
- 2 Tbsp lemon juice
- 1/2 small onion, grated or minced
- 3 cups cubed cooked turkey
- 8oz can sliced water chestnuts, drained
- 2 cups seedless green grapes, halved
- 1 cup cashews
- salt and pepper to taste
- lemon slices, optional

Preparation
Step 1
Cook wild rice; cool.
In a large bowl, combine yogurt, milk, lemon juice and onion until well mixed.
Stir in rice, turkey and water chestnuts; refrigerate until thoroughly chilled.
Just before serving, fold in grapes and nuts. Season with salt and pepper.
Spoon onto platter lined with lettuce leaves; garnish with lemon slices.
