PINEAPPLE UPSIDE DOWN CAKE

Ingredients

  • 1 20 oz. Can Crushed Pineapple
  • 1 Small Pkg. Vanilla Instant Pudding
  • 1 Small Pkg. Lemon Instant Pudding
  • 3/4 Cup Brown Sugar (firmly packed)
  • 1 Box Yellow Cake Mix (2 layer)
  • 4 Eggs
  • 1 Cup Cold Water
  • 1/4 Cup Oil

Preparation

Step 1

1. Line a 9" X 13" X 2" pan with parchment paper be sure you go up the sides.

2. Mix the crushed pineapple with the lemon instant pudding and stir with a spoon.

3. Combine cake mix and vanilla pudding mix, add eggs, water and oil in large mixer bowl.

4. Beat the above on medium speed for 4 minutes, while this is mixing go to step 5.

5. Pour the pineapple and lemon pudding mix in the lined cake pan and sprinkle with the brown sugar. Spread even over the bottom of the pan.

6. Pour the cake mix over the pineapple, lemon pudding and brown sugar.

7. Bake at 350 degrees for 55 to 60 minutes or cake begins to pull away from sides of the pan.

8. Cool in pan for 10 minutes and then turn upsides down on to your cake server. You may have to scrape the pineapple mixture from the parchment paper.
