Ingredients

  • Biscotti di Sesamo
  • Sesame Cookies
  • Ingredients
  • 16 tablespoons (2 sticks) butter, softened
  • 2 cups light brown sugar
  • 2 eggs
  • 3 cups flour
  • 1 teaspoon baking powder
  • 1/2 tsp baking soda
  • 1/2 teaspoon salt
  • 1 3/4 cups sesame seeds, toasted

Preparation

Step 1

Procedure
Preheat the oven to 375 degrees Fahrenheit
In a standing electric mixer fitted with the paddle attachment, cream the butter and brown sugar.
Add the eggs, one at a time, beating well after each addition
Gradually add the flour, baking powder, baking soda, salt, and half of the sesame seeds. Mix until just combined, occasionally scraping down the sides of the bowl.
Roll the dough into 1-inch balls. Roll the balls in the remaining sesame seeds. Flatten the balls into 1/4 inch disks and place on greased cookie sheets, spaced one inch apart. Bake for 10 minutes. Transfer the cookies to racks to cool. They will keep in an airtight container for 1 to 2 weeks .
