Bok Choy Salad

Ingredients

  • 5 Cups Bok Choy (can use 2.5 Cups and 2.5 cups of Romaine lettuce)
  • 1 bunch green onions
  • 1 Lg can of Mandarin Oranges
  • 1/2 Cup Sugar
  • 1/4 Cup white vinegar (can use cider vinegar or Red/white wine vinegar)
  • 1 Tbsp Soy Sauce
  • 1/2 Cup oil (Olive, Sesame...)
  • 2 Pkgs Ramen noodles
  • 1/4 Cup Butter or margarine
  • Slivered Almonds
  • Sunflower Seeds or Sesame Seeds

Preparation

Step 1

Mix Chopped Bok Choy/lettuce (1" - 1 1/2" pieces) and chopped green onions (greens and all) into large bowl.

Dressing:
Mix sugar, vinegar, soy sauce, salt and oil into separate container.

Noodle Mixture:
In fry pan, melt butter and add crushed Ramen noodles, slivered almonds and seeds. Lightly brown. Cool.

Before serving, toss/mix the noodle mixture and the mandarin oranges into Bok choy/lettuce mix.

You can choose whether you want to also mix the dressing in at this point, or serve it on the side.
