Soy Joy

Ingredients

  • 8 oz. chopped dark chocolate
  • 1 T. chopped fresh mint leaves
  • 1 t. mint extract
  • 1 T. flaxseed
  • 1/2 c. heavy cream
  • 1 1/2 c. plain soy milk

Preparation

Step 1

1. Melt chocolate in a double boiler. As the chocolate starts to melt, add teh chopped mint leaves and mint extract, and stir to combine.
2. When chocolate is fully melted, remove from heat, and pour mixture into a blender. Add flaxseed, heavy cream, and soy mild to the blender, and blend all ingredients together into a smooth texture.
3. Pour mixture into chosen pop molds and put sticks in place.
4. Freeze until solid.
