Egg Salad and Avacado

This mixture can be used plain, in a sandwich, or with crackers.

  • 3

    hard boiled eggs

  • 1

    ripe avacado, peeled and pit removed

  • spritz of fresh lemon juice

  • ½

    tsp salt

  • ¼

    tsp black pepper

  • ½

    cup chopped scallions

  • ½

    cup chopped watercress

  • Dijon mustard for bread if using on a sandwich

  • whole grain bread if making a sandwich


Cut up the hard boiled eggs and place them in a bowl. Add the avacado, spritz of lemon juice, salt and pepper, scallions and watercress, and combine well. If making a sandwich, spread some Dizon mustard on the bread, then top with the mixture. You can add a little mayonnaise and/or Dijon to the egg mixture.
