Strawberry Cookies with White Chocolate Chunks

Fresh strawberries, white chocolate and cream cheese make a winning combination in this sweet pink cookie. A dusting of sugar before baking adds sweet crunch.
Ingredients
- 2 tablespoons lemon juice
- 3/4 cup chopped fresh strawberries
- 1 1/4 cups plus 1-2 tablespoons flour, divided
- 1/8 teaspoon salt
- 1/2 teaspoon baking powder
- 1/4 cup butter, softened
- 3/4 cup sugar
- 4 ounces cream cheese, softened
- 1 egg
- 1 teaspoon vanilla
- 5 ounces white chocolate, chopped
- Sugar for sanding

Preheat oven to 350°F. Line baking sheets with parchment paper.
Pour fresh lemon juice over chopped strawberries. Let sit a few minutes, then drain. Set aside.
Whisk together 1 1/4 cups flour, salt and baking powder and set aside.
Beat butter with sugar and cream cheese until light and fluffy. Add egg and vanilla and mix well.
Gradually add flour mixture and mix until well combined. Stir in chopped white chocolate chunks.
Sprinkle strawberries with 1-2 tablespoons flour. Toss until all strawberries are coated with thin layer flour. then stir them gently into the batter.
Drop tablespoons of batter onto prepared pan. Chill 5 to 10 minutes. Sprinkle with sanding sugar.
Bake 13 to 15 minutes. Let cool in pans for a few minutes, then transfer to rack.
