Grilled Leg of Lamb

Ingredients
- 5-7 lb leg of lamb
- 1 head of garlic cloves
- 2 fresh rosemary springs leaves
- 3/4 cup Olive Oil
- Salt & Pepper to season

Preparation
Step 1
In a blender, combine garlic, rosemary, olive oil and 1/2 teaspoon of each Salt pepper. Puree until paste is formed. Set aside to bind flavor.
De-bone and remove surface fat of lamb. Cup to open like a book. Score surface lightly. Rub the lamb with garlic paste and marinate for 4 hours.
Season lamb with salt and pepper. Sear the outside of the meat on a hot grill or pan
Close grill cover and roast for 10 minutes in low heat. Or place in preheated 350 degree oven for 10 minutes. Lamb is done when center is still pink and internal temperature reaches 135 degress.
Allow lamb to stand for 5 to 10 mintues before slicing.
