OYSTERS****Grilled Oysters with Fennel Butter

24/12/14 - This was good, but I tried it as a substitute for the usual Oysters Rockefeller but it didn't measure up. The butter, notwithstanding all the various levels of fennel, just wasn't very "fennelly". I liked the texture of the oysters themselves, though, although I think that was probably exactly what Dan DIDN'T like.

Ingredients
- 1/2 teaspoon fennel seed, ground, or 1/4 teaspoon fennel pollen
- 1 stick butter, softened
- 1/2 tablespoon shallots, minced
- 1/4 clove garlic, grated
- 1 tablespoon finely minced fresh fennel
- 1/2 tablespoon chopped fennel greens, if available, or chopped fresh dill
- 1/2 teaspoon grated lemon zest
- 1 pinch cayenne pepper
- 1/2 teaspoon ground black pepper
- 1/4 teaspoon salt, or less - oysters are salty
- 12 medium oysters
Preparation
Step 1
Prepare and light a grill or preheat the oven to 500 degrees F (260 degrees C).
In a small bowl, blend together the butter with the remaining ingredients.
Arrange the oysters on the grill or on a baking sheet with rock salt or crumpled foil and top each oyster with 1/2 teaspoon of the fennel butter. Bake or grill until butter is melted and hot and oysters begin to curl around the edges - about 5 to 8 minutes.
Serve with lemon wedges on the side.
