Mom's Chicken Soup

Ingredients

  • 3 to 4 Chicken Breast
  • 1 med Brown Onion (diced)
  • 3 lg Carrots (diced)
  • 3 lg Celery Stalks (diced)
  • 1 tsp Poultry Seasoning
  • 1 tsp Ground Sage
  • 1 tsp Ground Marjoram
  • 2 tsp Dried Thyme (dbl if using Fresh)
  • 1 tsp White Pepper
  • Salt & Black Ground Pepper to taste
  • Water
  • Pasta or White Rice

Preparation

Step 1

Wash chicken and add to a large pot. Fill pot with water and add herbs. Bring to a boil, turn down heat so water is a slow simmer. Cook for 30 minutes. While chicken is cooking prepare vegetables. Remove chicken from water and add prepared vegetables to pot. Bring to a boil, cover and reduce to a slow simmer. Cook until almost done approx. 30 minutes. Add pasta or rice. Cut up chicken and add to pot.

Serve with fresh french bread and salad.

To reheat for leftovers add chicken stock to soup if additional liquid is needed.

You can also speed up cooking time by using a Costco Rotisserie chicken (I only use the chicken breast.)
