Ingredients
- 2 c sushi rice
- 2 1/2 c water (check manufacturer's instructions)
- 1 lime, juiced (2-3 T)
- 1/4 c cilantro, roughly chopped or ripped
Preparation
Step 1
Place rice & water in heavy saucepan with lid. Bring to a boil, uncovered. Cover immediately and reduce heat to low. Cook til water evaporates, about 15-20 mins. Fluff with rice paddle or fork. Remove to serving dish.
Add juice and most cilantro. Stir to incorporate. Taste and adjust lime or cilantro. Garnish top with remaining cilantro.
