Ingredients
- 1 Tsp salt, divided
- 1/2 Tsp black pepper, divided
- 4 (6oz) Tilapia fillets
- 1 Tbsp plus 2 tsps olive oil, divided
- 1 Cup diced tomatoes
- 1/2 Cup diced red onion
- 2 Tsps organic lemon zest
- 2 Tsps organic orange zest
- 2 Tbsps fresh lemon juice
- 2 Tbsps fresh orange juice
- 1 Clove garlic, minced
- 1/3 Cup white wine
Preparation
Step 1
1. Sprinkle 1/2 tsp salt and 1/4 tsp pepper evenly over the tilapia fillets. Heat 1 tbsp olive oil in a large skillet over medium-high heat; add the tilapia fillets and cookd for 4 minutes on each side. Meanwhile, combine the tomatoes, red onion, zests, juices, garlic, remaining olive oil, remaining salt, and remaining pepper in a medium bowl; set aside.
2. Remove the tilapia from the pan and keep warm. Add the white wine to the pan and scrape browned bits from the bottom of the pan. Add the tomato mixture and cook, stirring occasionally, for 2 minutes. Spoon the mixture over the tilapia and serve immediately.
