Sausage Penne Pasta

The onions in this dish are carmelized and almost melt into the pasta but lend it that wonderful "sweet onion" flavor. Any sausage can be used but I really like Aidell's Artichoke Gruyere chicken sausage. Smoked Sausages are best.

Ingredients
- 8 Aidell Artichoke Gruyere Sausage (or other favorite)cut in slices
- 1 Large onion cut in thin slivers
- 1 Red Bell pepper cut in slices, cut in thirds
- 2 T Olive Oil
- 3 cl garlic minced
- salt
- pepper
- 1 Box Mezze Penne Pasta
- 1 c grated parmesan (use good imported italian parmesan)
Preparation
Step 1
Bring salted Pasta Water to boil. Heat large skillet to medium. When hot add 2 T olive oil and onions. Season with Salt & Pepper. Saute onion, stirring frequently until softened. Add Sausage and continue to cook stirring frequently until sausage starts to brown and the onions continue to carmelize. Add garlic and cut up red bell pepper, continuing to stir frequently. Add pasta to water and return to a boil. When pasta is aldente add to skillet. Add parmesan, 1 ladle of pasta water and toss. Top with a little more parmesan and serve.
Don't rush the cooking of the onions, the key flavors in this dish come from the wonderful carmelized onion flavors.
