Fish: Fried Catfish

My Aunt Nell and Uncle Rob lived in Sanford, North Carolina. In Sanford there were two "Catfish houses". One was "upscale" and the other, well, let's just say, a bit on the lower scale side. My Uncle Rob, whom was from Merigold, Mississippi, preferred the "lower scale" catfish house, because the catfish was so much better there. Although I would agree with my Uncle Rob, that catfish house had the best catfish in all of the south, I agreed with my Aunt Nell, any place that required you to wear shirts and shoes was okay by me.
Ingredients
- 4 catfish filets, skinned and boned
- Old Bay Seasoning
- 1 cup all purpose nonbleached flour
- 1/4 cup cornmeal
- salt
- pepper
- peanut oil
Preparation
Step 1
Preheat Oil to 350*
Mix the flour and cornmeal in a pie plate with a whisk.
Sprinkle catfish with Old Bay Seasoning, salt and pepper, and rub into the fish.
Dredge the fish in the flour and cornmeal and place in the oil.
Cook for 7 minutes until lightly golden. Serve with tarter sauce.
