Ingredients
- 3/4 cup butter
- 1/2 cup onions, chopped
- 1 cup carrots, shredded
- 1 cup celery, chopped
- 1/2 cup + 2 Tablespoons flour
- 4 1/2 cups chicken broth
- 1/4 cup non-fat dry milk
- 1 1/3 cup water
- 3/4 cup potatoes, sliced
- dash of pepper
- 3/4 pounds Velveeta cheese
Preparation
Step 1
Melt butter in skillet. Saute vegetables until tender. Add flour and mix well. Cook 5 minutes. Add broth, milk, water, potatoes and pepper. Bring to a boil, stirring frequently until thickened. Cover and simmer until potatoes are tender (about 20 min) Remove from heat. Add Velveeta cheese and stir until melted.
