Ingredients
- 2 lbs chicken wings, tips discarded, wings and drum separated
- 2 qt water
- 1/2 cup TABLE salt
- 1 1/2 tsp cornstarch
- 1 tsp chili powder
- 1 tsp paprika
- 1/2 tsp garlic powder
- 1/2 tsp pepper
- 1/2 tsp oregano
- 1/2 tsp sugar
Preparation
Step 1
1. Make brine w/ water and table salt. Brine for 30"
2. Drain brine, pat dry, put wings in bowl
3. Combine remainder of ingredients and mix. Pour over wings and toss to combine - do this immediately before cooking.
4. Grill - clean grill, wipe grill with oil, turn burners to medium low
5. Place wings on grill thick side up, close lid and cook 12-15". Turn wings, close lid, cook an additional 10", cook to 180 (yes, 180). Remove from grill, tent w/ foil, let rest 5-10" before serving.
