Chicken (Turkey) Wild Rice Soup

This wild rice soup is delicious with either leftover chicken or turkey. Many cooks will double this recipe to feed a crowd!

Ingredients

  • 2 T. butter
  • 1 medium onion, thinly sliced
  • 1/4 c. flour
  • 4 c. chicken or turkey broth
  • 4 c. cut up cooked chicken or turkey
  • 1-2 carrots, thinly sliced
  • 1 1/2 c. cooked wild rice (1 1/4 cup of rice to 1 3/4 c. water before cooking--to double,use 1 1/2 c. rice to 3 1/2 c. water)
  • 1 c. half and half
  • 1/2 c. dry cooking sherry, wine
  • 1/2 t. salt
  • Minced or chopped parsley

Preparation

Step 1

Melt butter in pan, saute onion til tender.
Blend in flour, gradually add broth.
Cook stirring constantly til mixture thickens slightly.
Stir in rice and salt; simmer 5 minutes
Stir in chicken or turkey
Blend in half and half, sherry, sliced carrots, parsley.
Heat to serving temperature--may add black or white pepper to taste.
