Ingredients
- 1 (17-ounce) box frozen puff pastry sheets, thawed (2 unbaked sheets)
- 1 (15-ounce) container ricotta cheese
- 2 cups (8 ounces) grated Cheddar cheese
- 1 onion, finely chopped (about 2 cups)
- 2 eggs, slightly beaten
- 1/2 teaspoon salt
- 2 pinches cayenne pepper

What To Do:
Preheat oven to 375 degrees F.
Unfold 1 puff pastry sheet onto a 10- x 15-inch rimmed baking sheet.
In a large bowl, mix together remaining ingredients, except second pastry sheet.
Spread cheese-onion mixture onto unfolded pastry sheet.
Unfold remaining puff pastry sheet and place over mixture.
Bake 40 to 45 minutes or until golden. Cool slightly, cut into squares, and serve warm.
