Carmelized Onion and Portobella Quinoa

Ingredients

  • 1 * 1 cup Quinoa
  • 1 * 1 Tablespoon Olive Oil
  • 1 * 1 whole Small, Sweet Onion, Chopped
  • 1 * 1 cup Chopped Baby Portobella Mushrooms

Preparation

Step 1

Heat a skillet on medium and add one tablespoon of olive oil. Add in chopped onions and mushrooms, occasionally stirring until carmelized, about 20 minutes.

Prepare quinoa according to instructions. When finished, add in carmelized onions and mushrooms.

Serve as a side or in salads, wraps, or pasta
