Ingredients

  • 21/2 cups King ArthurFlour
  • 1 teaspoon salt
  • 1 teaspoon baking powder
  • 2 tablespoons confectioners' sugar
  • 2 tablespoons buttermilk powder
  • 1/4 cup vegetable shortening
  • 10 tablespoons very cold unsalted butter
  • 1 teaspoon vinegar
  • 6-10 tablespoons ice water
  • 1 cup coarse dry bread crumbs
  • 8 cups peeled, cored and sliced Granny Smith Apples (6)
  • 2/3 cup cinnamon sugar
  • 1 1/2 cups confectioners' sugar
  • 1/3 cup boiled cider
  • small pinch of salt
  • 1/2 teaspoon ground cinnamon1 teaspoon milk to thin glaze

Preparation

Step 1

1) To make crust: Whisk together the flour, salt, baking powder, confectioners' sugar, and buttermilk powder.

2) Add shortening, working it until the mixture is evenly crumbled.

3) Cut butter into small cubes. Add the butter to the flour mixture, and work in roughly with your fingers, a pastry cutter or a mixer.

4) Add 1 teaspoon vinegar and 4 tablespoons water, and toss to combine. Toss with enough additional water to make a chunky cohesive mixture.

5) Divide the dough into two pieces; one should represent about 40% of the dough, the other, about 60%.

6) Shape each piece of crust into a rectangle-roll with rolling pin. Cover with plastic wrap and refrigerate for 30-60 minutes.

7) Take larger piece and put it on a floured work surface. Roll it into a 11" x 15 " rectangle.

8) Place the crust into an ungreased pan. Push the pastry up the sides of the pan a bit to make a shallow pastry container for the apples.

9) Put the crust in the fridge while you get the apples ready. Start preheating oven to 350 degrees.

10) Spread the bread crumbs evenly over the crust.

11)Spread the sliced apples atop the crumbs.

12) Sprinkle the cinnamon sugar over th apples.

13) Roll the remaining piece of pastry into a 9x13" rectangle.

14)Lay the top crust over the apples . Seal as best as possible.

15) Slash crust 6 to 8 times to allow steam to vent.

16) Bake for 1 hour - remove and cool completely.

17) To make glaze: combine confectioners' sugar, boiled cider, cinnamon, salt and enough milk to make the mixture 'drizzable".
