Chicken Fettucini

Ingredients

  • 2 Lg. Chicken Breasts
  • 1 Tbl Olive Oil
  • 1 oz. Butter
  • 2 Bacon Rashers - Chopped
  • 2 Cloves Garlic
  • 8 oz mushrooms
  • 1/3 cup white wine
  • 2/3 cup heavy whipping cream
  • 4 spring onions
  • 1 Tbl flour
  • 2 Tbl water
  • 1/2 Cup Parmesean

Preparation

Step 1

Cook fettucini in large pan of water, drain and return to pan

Trim chicken of excess fat and cut in to thin strips. Heat oil and butter in heavy frying pan add chickent and cook over medium heat for 3 minutes or until brown. Add Bacon, mushrooms and garlic. Cook 2 minutes.

Add wine and cook to reduce to half. Add cream and onion. Blend Blower and water together until smooth - add to pan. stir until mixture boils and thickens.

Reduce heat and simmer for 2 minutes, season with salt and pepper to taste.

Add sauce to noodles and stir over low heat until combined. Sprinkle with parmesean and serve.
