Hot Cocoa Cookies

Ingredients

  • 1 2/3 C. semisweet chocolate chips
  • 1 C. unbleached all-purpose flour
  • 1/4 C. unsweetened Dutch-process cocoa powder (Hershey's Dark cocoa powder works in a pinch)
  • 1 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 C. (1 stick) unsalted butter, slightly softened
  • 1/2 C. packed light brown sugar
  • 1/4 C. granulated sugar
  • 1 large egg
  • 1 tsp. vanilla extract
  • 1 Hershey's Milk Chocolate Bar (about 12 squares)
  • 6 marshmallows, cut in half
  • Additional chocolate for garnish, if desired

Preparation

Step 1

Preheat oven to 350° f. and line 1-2 baking sheets with parchment paper.
Place 2/3 C. chocolate chips in a heatproof container and place it over, but not touching, a pan of simmering water (a double boiler may also be used).
Stir chocolate until smooth and thoroughly melted.
Remove from heat and set aside.
In a medium bowl, sift together flour, cocoa powder, baking soda, and salt.
In a large bowl, using an electric mixer on medium speed, beat together butter and brown sugar until blended and smooth, about 1 minute. Scrape sides of bowl as needed.
Switch the mixer to low and add in melted chocolate chips. Mix until blended.
Add in egg and vanilla. Mix for about 1 minute.
Add in flour mixture and mix until just blended.
Add in remaining 1 cup chocolate chips, making sure not to over mix.
Place heaping spoonfuls of dough onto lined baking sheets, spacing about 3 in. apart.
Bake cookies (one sheet at a time) for 13 minutes.
Remove from oven and place 1 square of milk chocolate bar on top followed by 1 marshmallow half.
Bake for another 4 minutes (if cookies are still doughy, it's okay to leave them in for about another minute).
Remove from oven and using the back of a spoon, slightly flatten marshmallows (if the did not completely flatten in oven).
Cool on sheet for 5 minutes before moving to a wire rack to cool completely.
Garnish with chocolate shavings if desired.
Makes about 12 cookies.
Notes
Always, always remember when baking cookies that they may still look slightly underdone when you take them out, but they will continue to bake after being removed from the oven. These cookies even changed form while I was adding the chocolate and marshmallows!
