Chocolate-Peppermint Crunch Bars

Ingredients

  • 10 tablespoons unsalted butter, divided
  • One 10-ounce package marshmallows
  • 1 teaspoon peppermint extract
  • 6 cups cocoa rice cereal such as Cocoa Krispies
  • One 12-ounce package semi-sweet chocolate chips
  • 1/4 cup crushed peppermint candies or candy canes

Preparation

Step 1

Butter a 13 x 9-inch pan or line with parchment paper.

In a large pot, melt 4 tablespoons butter and the marshmallows, stirring occasionally. Once melted, turn off the heat and stir in the peppermint extract. Add the cereal and mix until the cereal is coated with the marshmallow mixture. Pour into the prepared pan and press into an even layer.

In a small pan, melt the remaining 6 tablespoons butter with the chocolate chips. Pour the chocolate mixture over the bars and spread with a spatula. Top with the crushed peppermint candy. Let cool before cutting into 24 bars (4 rows by 6 rows).
