Oven Chicken and Dumplings

Ingredients

  • Filling:
  • 1-1/2 pounds boneless, skinless chicken breasts, chopped
  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 3 tablespoons Homemade Gourmet Grandmothers Sunday Roast Seasoning
  • 1/2 cup half-and-half
  • 1 10.75-ounce can cream of chicken soup
  • Dumplings:
  • 1-1/2 cups buttermilk biscuit mix
  • 1 cup shredded cheddar cheese
  • 2/3 cup milk

Preparation

Step 1

1. Preheat oven to 350 degrees. In nonstick skillet, saute chicken, onion, and celery until juices run clear. Add remaining filling ingredients; stir until smooth. Pour into a 9-inch deep-dish pie pan.

2. For dumplings, combine biscuit mix and cheese in a bowl. Stir in milk with a fork. Drop dough by tablespoonfuls onto filling mixture.

3. Bake, uncovered, for 35 minutes or until dumplings are golden brown.

Note: This makes a traditional, northern casserole with biscuit dumplings.

Substitute chicken breast and seasoning for 2 1/2 cups chopped Grandmothers Baked Chicken Breast.

1. Preheat oven to 350 degrees. Spray nonstick skillet with non-stick cooking spray, saute onion, and celery over medium-high heat until vegetables are tender. Add chicken breast, half-and-half, and soup; stir until smooth. Pour into a 9-inch deep-dish pie pan.

2. Continue with step 2 and 3 above recipe instructions.
