  • CRUST:
  • 1 cup all-purpose flour
  • 6 tablespoons unsalted butter, at room temperature
  • 2 tablespoons light brown sugar
  • 1/4 teaspoon salt
  • PECAN TOPPING:
  • 4 tablespoons unsalted butter, 1/2 stick
  • 1/3 cup packed light brown sugar
  • 2 tablespoons corn syrup
  • 1 teaspoon whole milk
  • 1 cup chopped pecans
  • 1 1/2 teaspoons pure vanilla extract

Preparation

Step 1

Make the crust:
Preheat the oven to 350 degrees F. Line an 8 x 8-inch square pan with parchment paper, leaving overhang for easy removal.

In a medium bowl, combine the flour, butter, sugar and salt. Mix with a hand mixer until well combined. Transfer to the prepared pan and press into an even layer. Bake in the oven until the edges are light brown, about 15 minutes.

Make the pecan topping:
While the crust is baking, combine the butter, sugar, corn syrup and milk in a medium saucepan over medium heat. When the mixture becomes hot and bubbly, stir in the pecans and cook for 30 seconds to 1 minute. Remove from heat and stir in the vanilla.

Pour the hot mixture over the crust and bake until bubbly, about 15 minutes. Remove from the oven and let cool. While the bars are still warm, lift the parchment paper out of the pan. Cut into 24 pieces (4 rows by 6 rows).

Tip: For more nutty flavor, toast the pecans before stirring into the topping.
