Lemon Raspberry Muffins

Ingredients
- 1 1/2 C All Purpose Flour
- 3/4 C White Sugar
- 1/4 t Salt
- 2 t Baking Powder
- 1 t Baking Soda
- 1/3 C Vegetable Oil
- 1 Egg
- 2/3 C Yogurt
- 1 C Raspberries
- 1 t Lemon Zest
- Muffin Liners

Preparation
Step 1
1. Preheat oven to 400 degrees
2. Mix dry ingredients in a bowl
3. In a separate bowl, mix the wet ingredients
4. Mix wet and dry mixtures until all the dry ingredients have disappeared
5. Fold (Don't mix) in raspberries
6. Fill muffins in tin using 1/4 C
7. Bake for 25 minutes or until the tops bounce back when lightly pressed
