Nutty Porridge

This primal porridge made it so I didn't miss my morning oatmeal anymore. No, really!

Ingredients

  • Pre-soak:
  • 2 cups organic nuts {almonds or walnuts or a mix!}
  • Pinch of salt
  • Water
  • Morning:
  • Soaked nuts, rinsed well {until water runs clear}
  • Pinch of salt
  • 1 1/4 cups to 1 1/2 cups organic coconut milk {full fat} or just use water
  • 1/2 tsp organic cinnamon
  • 1/2 tsp organic vanilla extract
  • Toppings of choice

Preparation

Step 1

Soak nuts in a bowl with salt and enough water to cover them completely overnight. In the morning, rinse incredibly well. Drain and pour into food processor or blender.

Add the remaining ingredients and blend well, adding more liquid if necessary. Pour into saucepan and heat over low until heated through.

Top with your choice of toppings. I top mine with a teaspoon of organic coconut oil, a healthy pinch of organic coconut shavings, and a few organic berries {straight from the freezer}.
