Ingredients
- 8 oz new or fingerling potatoes
- 1 tbs canola oil
- 1/4 tsp Kosher salt
- 1/8 tsp pepper

Step 1
Place potatoes in a heavy resealable plastic bag; seal bag. Use a meat mallet or rolling pin to smash potatoes and crack their skins; remove potatoes from bag. Heat oil in a nonstick skillet coasted with nonstick spray over medium heat. Add potatoes to skillet; partially cover. Cook potatoes until soft and starting to brown, 8-10 minutes; season with salt and pepper.
