Ingredients

  • For The Lamb:
  • 1 boneless leg of lamb (2 pounds)
  • 2 Tablespoons Soy Sauce
  • 1 1/2 Tablespoons lemon juice
  • 3 to 4 tablespoons extra virgin olive oil
  • 1/2 teaspoons rosemary
  • 1-2 crushed garlic
  • For The Pickled Walnut Sauce:
  • 1 pickled walnut chopped
  • 1 pint sour cream

Preparation

Step 1

Pat the lamb leg dry with paper towels and rub all over with the olive oil. Marinate the lamb for one hour. Allow the leg to sit at room temperature for 1 hour. Thirty minutes before you’re ready to cook the lamb, preheat the grill or oven to 375°F.

Roast at 375 degrees for 35 minutes or until thermometer registers 145°F degrees (medium rare), to 160 degrees (medium), baste with oil. Broil on top rack for 2-3 minutes.

Warm chopped walnut and sour cream in a small sauce pan on low, being careful not to curdle. Serve over meat.
