Ingredients
- (2 T coconut oil)
- 2 onions, sliced thin
- (2T minced garlic)
- 1 pkg fajita seasonings
- 2 green bell peppers, seeded & sliced
- 2 red bell peppers, seeded & sliced
- 4 fresh green chilies, seeded & sliced
- 2-3 T chopped cilantro
- 8 oz sliced mushrooms
- 2 limes, juiced
- 12 wheat tortillas
- (Cheese, optional)
- Rice of choice, Spanish or Saffron
Preparation
Step 1
Melt coconut oil in lg skillet, add onions, garlic, and fajita seasonings. Stir-fry until onion is tender. Add remaining
ingredients, except tortillas. Stir well and let simmer for 15-20 min.
When tender, serve mixture on tortillas. Add shredded cheese if
desired.
Cook desired amount of rice according to pkg directions. Serve
alongside fajitas.
