Mushroom Onion Frittata

Ingredients

  • (8 T butter)
  • 3 red onions, sliced thin
  • 16 oz sliced mushrooms
  • (2 t thyme)
  • (Salt & pepper)
  • 6 eggs
  • 1/2 c heavy cream
  • (Salt & pepper)
  • 1/4 c Italian style cheese
  • 32 oz bag Italian style green beans
  • (2 T coconut oil, salt, pepper)

Preparation

Step 1

Heat butter in lg skillet w/ lid. Add onions and stir-fry over med
high heat until tender. Lower heat to med and add mushrooms.
Heat until mushrooms are tender. Add thyme, salt & pepper. In
a mixing bowl, lightly beat eggs, cream, salt & pepper, & pour
over mushrooms and onions. Turn heat to low and cover. Cook
until firm then sprinkle w/ cheese. Place under broiler until cheese
is melted and slightly browned.
Meanwhile add coconut oil to skillet and melt. Add beans and
stir. Cover skillet and steam for apx 5-7 min. Add ½ c water and
continue to steam, adding water if beans begin to burn. Steam till
tender. Add salt & pepper.
