Green Pepper Steak

Ingredients

  • 1 lb Top Sirloin
  • 1/4 c Soy Sauce
  • 1 clove of Garlic (minced)
  • 1 1/2 tsp Grated Fresh Ginger or 1/2 tsp ground
  • 1/4 c Salad Oil
  • 1 c Green Onion
  • 1/2 c Green Pepper
  • 1/2 c Red Pepper
  • 2 stalks of Celery
  • 1 TBSP Cornstarch
  • 2 Tomatoes (cut into wedges)

Preparation

Step 1

Using a very sharp knife cut beef across the grain into very thin strips. Combine soy sauce, garlic, ginger and add beef. Toss and set aside while preparing vegetables. Prepare vegetables by thinly slicing green onion and celery. Cut peppers into 1" squares. Heat oil in a large wok style pan and add beef, toss quickly over high heat until browned. Taste meat. If it is not tender cover and cook for approx. 30 to 40 minutes over low heat.
Turn heat high and add vegetables, toss until vegetables are tender but still crispy about 10 minutes. Mix cornstarch with cold water to make a runny paste. Pour into pan and stir quickly until thickened. Toss tomatoes and heat through.

Serve over white rice.
