Crock-pot Chili

Ingredients

  • 1 medium yellow onion, diced
  • 1 medium vidalia onion, diced
  • 2 lbs ground beef
  • 1/2 lb hot sausage
  • 1-2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tbsp dried basil
  • 1 tbsp dried oregano
  • 2 tsp kosher salt
  • 1 tsp black pepper
  • 1 tbsp dijon mustard
  • 2 large cloves garlic, minced
  • 1 6-oz can tomato paste
  • 1 28oz can tomato sauce
  • 1 14 1/2 oz can diced tomatoes
  • 1 16oz light kidney beans, drained

Preparation

Step 1

Scatter onions over bottom of crock-pot. combine beef and sausage, crumble over onions.
in a small bowl, blend together chili powder, cumin, basil, oregano, salt, pepper, mustard, and garlic; spread over meat.
add tomato paste. add tomato sauce, diced tomatoes, and beans; stir just to moisten meat.
cook on low heat for eight hours.
stir chili, breaking up meat chunks. Ladle into bowls; top with sour cream, shredding cheddar, and chopped scallions if desired.
