Kate's Rice Pudding

Ingredients

  • 2 Qts. Milk
  • 2 tsp. Vanilla
  • 1/2 Cup Sugar
  • Dash of Salt
  • 2/3 Cup Rice (NOT instant)
  • 1 Pkg. Vanilla Pudding (NOT instant)

Preparation

Step 1

Mix together all ingredients except instant pudding in a large saucepan. Stir while bringing to boiling. Watch closely. Turn to low for 1 hour and 15 minutes. When rice is soft, add 1 package of vanilla pudding (not instant) and bring to a boil again. This will only take 2-3 turns of the spoon to mix before it boils again. Immediately stir and remove from heat. Let stand for about 20 minutes before serving warm; otherwise let cool to room temperature and then refrigerate.
