Ingredients
- 3 eggs
- 1 cup vegetable oil
- 1 cup sugar
- 1/3 cup unsulfured molasses
- 2 t vanilla
- 2 cups flour
- 1/2 cup whole wheat flour
- 2 t cinnamon
- 1 t salt
- 1 t baking soda
- 1/2 t baking powder
- 2 cups shredded zucchini
- 1 cup raisens
- 1 cup chopped walnuts
Preparation
Step 1
Preheat oven to 350.
Beat eggs, oil, sugar, molasses and vanilla. Slowly add dry ingredients. Lastly add zucchini, raisens and nuts. Bake in 2 5x9 pans for 1 hour. Cool for 10 minutes before removing from pans.
