Chocolate Chip Coconut Oatmeal Cookies (Be 'wiched)

Ingredients

  • 8 cups unsalted butter
  • 6 cups brown sugar, loosely packed
  • 8 tsp baking soda
  • 2 cup boiling water
  • 8 tsp vanilla
  • 12 cups all purpose flour
  • 2 cups flax seed
  • 4 tsp salt
  • 16 cups of rolled oats
  • 4 cups of coconut
  • 12 cups semisweet chocolate chips (higher end chocolate is preferred)

Preparation

Step 1

Cream butter, and then blend in the sugar until well-mixed. Dissolve the baking soda in the boiling water and add to the butter-sugar mixture, followed by the vanilla. Stir together the dry ingredients; slowly add them to the creamed mixture. Mix well. Stir in the chocolate chips.

Form balls and slightly flatten on a cookie sheet lined with parchment paper. Bake @ 350 for 12 to 15 min. (Best to under bake slightly and leave to cool on pan for five minutes before placing on a cooling rack).
